SOWING: Sow outside in sunny location in rich, well-drained soil, after danger of frost has passed. Plant seeds 1/2 inch deep 1 inch apart; in rows 16 inches apart. Firm soil over seed.

THINNING: Thin plants to 8 inches apart when 3 inches tall; does not transplant well.

SUGGESTIONS:  Leaves may be picked sparingly as plant grows or more severely if growing for leaves only. Gather seeds as they ripen. Use whole or crushed. Leaves may be used chopped or whole, fresh or dried. Protect plants from wind.
Coriander (Cilantro)
Coriandrum sativum

Annual Herb. Popular in Oriental or spicy Mexican dishes. Cilantro is also called Coriander or Chinese Parsley. Use pungent leaves (Cilantro) in Oriental and Mexican dishes. Salsa essential! Popular in spicy Mexican cuisine, complementing fiery chile peppers. At its best used fresh, cilantro is to Mexican what parsley is to Americans. This slow-bolting strain is grown primarily for it's broad, deep green, celery-like, pungent foliage. The leaves are used in soups, tomato sauces, stirfry cooking, salads, stuffings, and cream cheese spreads. You can also harvest seeds (called "coriander") from mature plants for use in cooking and baking. The seeds are aromatic with nutmeg/citrus flavor. Dried, powdered seeds are used in sweet breads, cakes, cookies, baked fruit, candies, cheeses, meats, sausage, and pickles. Use seed to flavor meats, pickles and baked goods. The seeds (Coriander) are also used to make curry powder. Cilantro is the secret in Chinese and Mexican cooking. Start outdoors after danger of frost. Height: 24 inches. Sun. Medicinal:
Used internally for minor digestive problems. Seed oil is fungicidal and antibacterial.
Edible flowers: use leaves and flowers raw as the flavor fades quickly when cooked. For flower use, remove small florets from stem and chop.
